Vegetarian Ravioli Sauce With Tomatoes, Zucchini And Olives


Here is a delicious and simple ravioli sauce that can be made quickly for a hectic weekday. Ravioli is a great everyday vegetarian meal since it is easy to make and can be combined with a number of vegetarian sauces. Serve with fresh bread and a green salad for a complete meal.

Ravioli is like a meal in itself, but a sauce makes it spectacular. This sauce is simple but tastes great together with fresh vegetarian ravioli like the spinach and ricotta filled that I used.

The trick with the zucchini is to cut it in strips, this allows them to retain some crunchiness through the cooking which complements the larger ravioli bits so lovely.

The tomatoes complement the zucchini, and for some extra flavor and saltiness, chopped black Kalamata olives suit perfectly.

Another trick for making the sauce great is to slowly saute the onions, never letting them brown. Give it a long slow saute for about 6 min, then add the zucchini strips and continue for 4 min more.

Over-cooked zucchini is not fun; you want to have a nice, crunchy “bite” to it.

Here’s what you’ll need:

  • 1 pkg. Fresh Vegetarian Ravioli
  • 2 Tbs. olive oil
  • 2 small zucchini, in strips. Cut in 2-inch lengths. Then cut each piece lengthwise into 1/4 inch slices. Finally cut the slices lengthwise again into 1/4 inch strips. The more evenly sized they are, the more evenly they cook.
  • 1 small red onion is cut in thin wedges.
  • 1 can of chopped tomatoes.
  • 1 handful of Kalamata black olives, pitted and roughly chopped.
  • 1/2 tsp. oregano
  • 1/2 tsp. basil
  • Salt and pepper to taste.

Here’s what you do:

  1. Prepare a large pot with water and 1 tsp salt for the ravioli.
  2. Prepare the vegetables.
  3. Heat the oil in a large skillet over medium heat. Add the onions and saute 6 min. Do not let them brown.
  4. Add the zucchini strips and cook for 4 min more, stir often.
  5. Add tomatoes, olives, herbs, and salt and pepper.
  6. Let the sauce simmer for 20 min. while you prepare the pasta.
  7. Cook the ravioli pasta according to the instructions. Drain.
  8. Add some of the sauce to the ravioli, and stir carefully.

Serve on plates, ladle more ravioli sauce on the pasta, grate Parmesan cheese on top and dig in!
